over the weekend the fireman & i had a little get-together with our families... i guess it could have been considered a mini house warming party! so where there's a party... there's got to be good food! ((because we like to eat... if you haven't heard)). so we made....... bruschetta, a big cheese plate with pairings, a crispy chinese chicken salad, ricotta-stuffed shells, BBQ'ed Rib Eye steaks & ceder-block BBQ'ed salmon!! Oh, and this delicious and oh-so zesty LEMON CAKE! dang, that's a lot of food. but that's how we roll. it all turned out super good... especially the zesty-tangy-lemony lemon cake!

*cake ingredients:
1 & 1/2 boxes of lemon cake mix... yes, 1 AND a 1/2 boxes.
1/2 box of lemon jello (this makes the cake super moist!)
5 eggs (see cake mix boxes)
vegetable oil (look to cake mixes for measurement)
3 juicy lemons (& the zest of these lemons)
**frosting ingredients:
**go here for the frosting recipe
butter
powdered sugar
milk
* squeeze the juice of all three lemons... and use this juice towards your water ratio in your cake mix.
(little side-note: using an electric hand-mixer is way better then doing it manually. mine is currently broke.)
* follow frosting recipe here, garnish with fresh lemon slices... and enjoy your yummy cake!
i don't know about you, but MY mouth is watering! YUM!
ps: this little diddy is great for cupcakes too!

Damn that looks amazing. I saw a similar recipe for pink lemonade bunt cake earlier this week and now I need some lemony dessert in my life pronto!

It was really good! But this recipe makes a LOT of cake. So beware. The rest of the cake went to the fire station. They were happy.
